Carrot pie is a simple and tasty pastry that goes well with coffee. Don’t forget generous frosting!

Dessert

Ingredients for a baking tray

  • 3 eggs
  • 2½ dl of sugar
  • 4 dl of wheat flour
  • ½ teaspoon of salt
  • 1 tablespoon of baking powder
  • 1 tablespoon of cinnamon
  • 200 g of butter or margarine
  • 4 dl of grated carrots
  • 1 dl of crushed pineapple

Dressing: 

  • 100 g of processed cheese
  • 250 g curds
  • 2½ dl of powdered sugar
  • 2 teaspoons of vanillin sugar
  • 3 tablespoons of chopped nuts

Recipe

  1. Beat eggs and sugar into foam.
  2. Mix dry ingredients together and add into dough.
  3. Finally, add finely grated carrot and crushed pineapple.
  4. Spread the dough on a flanged baking sheet, on top of baking paper.
  5. Bake in baking oven at 200 °C for 15–20 minutes.
  6. Prepare the frosting by mixing the processed cheese until pliable, then add curds, powdered sugar, and vanillin sugar. Frost immediately, decorate with ground nuts.
